Banana Chocolate Chip Cake

Over ten years ago, my aunt compiled her time tested recipes into an absolutely amazing cookbook. This sweet treat is my adaptation of her adaptation of a friend’s recipe. This cake is wonderful when friends are over for dinner during the week or for an afternoon tea. It’s the perfect birthday cake for a friend or family member who doesn’t like icing and overly sweet desserts. It freezes beautifully and is very easy to transport.

Ingredients
  • 4 ripe bananas, mashed
  • 1 cup vegetable oil
  • 2 eggs
  • 1 tsp vanilla
  • 1 cup sugar
  • 1 cup milk or soy milk 
  • 3 cups flour
  • ¼ teaspoon salt
  • 2 teaspoon baking soda
  • 2 teaspoons baking powder
  • 1⅓ chocolate chips (10 oz)
  • ½ cup brown sugar
  • 2 teaspoons cinnamon
Instructions

Preheat oven to 350F.

In one bowl, mix together mashed bananas, vegetable oil, eggs, vanilla, sugar, and milk. In another bowl, mix flour, salt, baking soda, and baking powder. Combine the wet and dry ingredients and mix well.

In a third bowl, combine chocolate chips, brown sugar, and cinnamon. Mix together and set aside.

Grease two 8″ pans. I prefer to use non-stick cooking spray. In one pan, put a quarter of the batter and spread it evenly around. Top with a quarter of the streusel topping, then layer another quarter of the batter. Spread that out well and finish with another quarter of the streusel topping.

Do the same thing in the other pan, and bake your lovely cakes for 35-45 minutes, or until a cake tester or tooth pick inserted into the center comes out clean. Let cool for 30 minutes, then run a knife along the sides of the pan to ensure that the cake hasn’t stuck.

To remove the cake from the pan, place a dinner plate on top of, and, in one confident motion, flip the pan upside down. Take your serving plate and place it on the cake, and flip your cake once more. Ta da! Don’t worry if some chocolate gets lefts behind on the dinner plate. No one will be able to tell and you’ll have a delicious sneak peak of the cake.

    1. Hi Winds! Wow, your first banana cake, so exciting 🙂 I’m really sorry but I don’t know the measurements in grams. I’ve heard that 1 cup of flour is 225g but I really don’t know for sure. So sorry.

    Since 3 cups of flour I made the sugar cup as 2 and brown sugar as 1 cup
    So this came out very for me.thank you for a tips .

  4. Hi Reveena, I was so excited and proud to learn of your success! This was one of the first recipes that came up in my search for banana chocolate chip cake. This was the best one I’ve ever tasted! I had to stop myself from picking at the delicious top. I made it in 2 loaf pans and they were spilling over. Next time I will try to make it in 3 pans and see what happens. Wonderful cake and I will make it again. I look forward to experimenting with your other recipes! I like that they are mostly vegan/vegetarian and pretty healthy. Best regards.
