Sparkling Sorbet Floats

This is my absolute favorite summer dessert, light, fruity, and delicious. My only wish is that more ice cream shops carried soda water so I could get this when I’m out and about. Feel free to keep it super simple with just the sorbet and soda water, but you can also take it a step further by adding some fresh fruit or fresh herbs. I’ve provided a few suggestions below for such occasions. You could also make this with fizzy wine. 

Ingredients
  • Soda Water
  • Sorbet
  • Herbs
  • Fresh Fruit
Instructions

In glass combine 1/3 cup sorbet, a tablespoon of fresh herbs, some fresh fruit (soft fruit works best – berries, papaya, prickly pear fruit, persimmons, lychee, melons, etc) roughly chopped, and top with cold soda water to taste. Mix together slightly.

  • Fresh melon balls (which you can make using a melon baller)

  • Lemon/lime wedge

  • Fresh basil
  • Fresh strawberries or raspberries, quartered
  • Strawberry sorbet
  • Fresh mint
  • Fresh Watermelon balls (or chunks)
  • Mango Sorbet
  • Fresh basil
  • Papaya chunks
  • Mango sorbet
  • Fresh mint
  • Fresh mango and/or cantaloupe
