In this episode, I’m joined by my lovely friend Rachel to talk a little bit about the importance of forgoing gender roles in order to create a society of equality. These mini morsels of heaven are therefore the perfect treat for a birthday party regardless of gender, or even for the big football game! The jam is a crucial part of this recipe, so don’t even think about omitting it. The cupcakes stay fresh for at least 3 days, or can be made in advance and frozen until you’re ready to eat them. The coconut whipped cream will stay thick and creamy for around 4 days in the fridge.

Ingredients – Mini Cupcakes
- 1 cup flour
- ½ cup sugar
- ½ tsp baking soda
- ½ tsp baking powder
- ¼ tsp salt
- ¼ cup apple sauce
- ½ cup vegetable oil
- ½ cup almond milk
- 2 tsp vanilla bean paste
- 1½ tsp apple cider vinegar
Instructions – Mini Cupcakes
Preheat the oven to 300°F. Line mini-muffin tins or spray with vegetable cooking spray.
In a bowl, whisk together dry ingredients (flour, sugar, baking soda, and salt). Add wet ingredients (apple cider vinegar, apple sauce, vegetable oil, vanilla bean paste, and almond milk). Mix and put into prepared mini muffin tins. This will make 24 mini cupcakes, or 12 regular sized cupcakes.
Bake at 300°F for 15 minutes or 25-30 minutes if you’re making regular sized cupcakes.
Ingredients – Topping
- 1 can full fat coconut milk†
- Strawberry Jam
- Fresh strawberries, halved
† If you have different options in the grocery store, check the fat content and buy the most calorific one. Yum!
Instructions – Topping
Chill one can of full fat coconut milk for at least 4 hours. Open the can from the bottom, drain the thin coconut water, then scrape out the creamy flesh into a bowl. Use an electric mixer to whisk the coconut cream until it’s thick and luscious.
To serve, take a mini cupcake, spread a thin layer of jam atop, then a small blob of coconut whipped cream, and top with fresh strawberries.
