Sweet Potatoes


These perfectly spiced sweet potatoes were featured in the food section of the Montreal Gazette. They definitely merit their star-worthy featurette and pair well with my Portobello mushroom burgers or vegan bean burgers.

  • 1000g sweet potatoes, cut into 1 inch pieces
  • 2 tbsp olive oil
  • 1 tsp turmeric
  • ½ tsp cumin
  • ½ tsp chili powder
  • ½ tsp salt
  • ¼ tsp cinnamon
  • ¼ tsp coriander

Preheat oven to 400°F

In a bowl, whisk together the olive oil, turmeric, cumin, chili powder, salt, cinnamon, and ground coriander. Place the sweet potatoes into a large baking dish and coat with oil spice mixture. Stir well and place into the preheated oven for 60 minutes, stirring halfway through.
