Breakfast Sandwiches

I love breakfast sandwiches, but as a person who dances the line between vegan and vegetarian, I find these delights hard to find to my liking out of my home. This is also a great dinner, as it comes together quick and deliciously. I’m providing two different recipes here, but you can mix and match the different components. My favorite combo is actually the vegetarian avo-mayo with the mushroom and onion mix. Feel free to melt some sharp cheese on your bread if you roll that way. Unfortunately, my belly doesn’t.

Vegan
Ingredients – Mushrooms and Onions*
  • 2 tablespoons olive oil
  • 2 onions, halved & sliced
  • 16oz mushrooms, stems removed & sliced
  • Salt & pepper

*This quantity makes leftovers, which are greatly appreciated in my house, but if you prefer to make exactly the right amount, half the quantities.

Instructions – Mushrooms and Onions

Combine all ingredients in a sauté pan and cook over medium high heat until golden and delicious, around 10-15 minutes.

Ingredients – Avocado Mash
  • 1 avocado
  • 3/4 cup white beans (cannellini, kidney, etc)
  • 1 1/2 tablespoons Dijon mustard
  • 1 tablespoon lemon juice
  • Salt & pepper
Instructions – Avocado Mash

Combine all ingredients in a bowl and mash to combine. Adjust seasonings to taste. You can also do this in a food processor if you prefer, this won’t fit in a mini food processor unless you’re having the batch. .

Ingredients – Assembly
  • 1 large loaf of ciabatta, cut in half lengthways then into four pieces or 8 slices of hearty bread
  • 2-3 tomatoes, sliced & seasoned lightly with salt and pepper
  • 1 cup greens (lettuce, arugula, mixed greens)
Instructions – Assembly

Toast your bread then spread your avo-bean mix on both sides followed by the mushies and onions, greens and tomato. Cut into triangles (because they taste better than rectangles) and enjoy.

Vegetarian
Ingredients – Fried Eggs
  • 2 tablespoons vegetable oil
  • 4-8 eggs (depending on the size of your bread)
Instructions – Fried Eggs

Heat the oil a pan (non-stick is best) over medium heat, then add the eggs, cook until the white is set, then flip if you like your egg cooked through.

Ingredients – Avocado Mash

  • 3 tablespoons mayo (or vegan mayo)
  • 1 1/2 tablespoons Dijon mustard
  • Salt & pepper
