Classic Italian Tomato Sauce

This simple pasta sauce is so delicious you’ll make nona jealous. My Italian friends can vouch.

Ingredients
  • 2 tbsp olive oil
  • 2 diced onions
  • 3-4 cloves sliced garlic
  • 2 tbsp dried oregano
  • 1-2 tsp dried basil
  • ½ tsp chili flakes
  • 2 tbsp balsamic vinegar
  • 1 can of good Italian tomatoes
  • 500g pasta
  • Salt to taste
  • Fresh basil and parsley
  • Parmegiano reggiano
Instructions

Heat the olive oil in a large pan and add the diced onions. Once the onions have softened, add the sliced garlic, dried oregano, dried basil, and chili flakes. Sauté until golden brown, add the balsamic vinegar and cook until the vinegar is completely reduced (about 2 minutes). Add the Italian tomatoes.

Boil a large part of heavily salted water and add your package (500g) of pasta. Cook until the pasta is al dente.

Drain your pasta, but reserve some of the cooking water (this will help the sauce cling to the pasta). Combine the sauce with the pasta and some of the cooking water. Garnish with fresh basil, parsley, and a generous grating of parmegiano reggiano.
